Saturday night at Noma – three times winner of Best Restaurant in the World – is a time that head chef René Redzepi uses to challenge his team to perfect a dish by selected team members for that week. These "Saturday Night Projects" have become sessions in which they truly explore the wonders of food in an engaging and comfortable learning environment.
